Sole Fillet Roll Ups

This recipe is low in fat and high in fibre thanks to the couscous. It took some convincing before my husband would try it (he doesn't like fish, thus explaining why you don't see many seafood recipes on my site) Needless to say once he tried it he liked it. His comment was that it didn't taste too fishy??!!
8 sole fillets
3/4 cup cooked couscous
1/3 cup mixed,chopped nuts
1 tsp. hoisin sauce
1/2 tsp. minced garlic
1/2 tsp. sesame oil
1/2 cup lemon juice
Dried cilantro or parsley
In a dish or tupperware container place the lemon juice and the sole. Marinate in the refrigerator for 1 hour.
Cook the couscous. Measure 1/2 cup uncooked couscous, and 1 cup water into a saucepan and simmer until all the water is absorbed. It shouldn't take much longer then 5 minutes.
When the couscous is cooked transfer it to a bowl. Add the hoisin sauce,garlic, and sesame oil, and nuts.
Remove the fillets from the lemon juice, reserving the lemon juice for later.
Spread each fillet on a flat surface and spoon the couscous mixture in a thin layer along the length of the fillet.
Roll it up and place in a baking dish. Contine until all fillets are done. Pour the remaining lemon juice over the fillets.
Cook in a 300 degree oven for 30 minutes
Serves 4
Preparation time (not including marination time)  45 minutes
