TORTILLA SOUP

 

1 onion chopped
Salt & Pepper to taste
1 (4 oz) can green chilies chopped
2 tsp. Worcestershire Sauce
2 cloves garlic, minced
1 tsp. limejuice
1 (14 oz) can chopped tomatoes with juice
1 can black beans
4 cups chicken stock
1 tsp. cumin
1 can tomato soup
chili powder to taste

 

2 chicken breast, boneless, skinned sautéed until opaque in the middle Desired amounts of sour cream, avocado, limejuice, grated cheddar cheese, tortilla chips.

Sauté onion, green chilies, garlic and tomatoes with juice in a large soup pot, until simmering. Add stock, soup, spices, Worcestershire and limejuice. Simmer for 1/2 hour. Add (already cooked) chopped chicken and black beans (not drained). Cook over low heat for 30 minutes. Pour into soup bowls. Sprinkle tortilla chips on soup. Garnish with cheese, sour cream, avocado and lime wedges.
