Serve this vegetable casserole with your favorite roasted or grilled meats.
Serves 4
3 tablespoons Olive
oil
1 pound Spinach, rinsed, stems removed, and chopped
2 medium Zucchini, sliced
1 medium Onion, chopped
1 teaspoon
Garlic, minced
1/4 cup Basil, chopped
3 Eggs
3/4 cup Parmesan cheese
3/4 cup Breadcrumbs
Salt and pepper to
taste
Heat the oil in a heavy skillet. Add the spinach and cook until just limp. Remove with a slotted spoon. Set aside.
Add the zucchini, onion, and garlic to the pan. Cook until just soft. Remove from the heat. Return the spinach to the pan.
Add the basil. Lightly oil a medium casserole dish. Add the vegetable mixture. Lightly beat the eggs and pour over the vegetables.
Sprinkle on the Parmesan and breadcrumbs.
Bake at 350 for 18-25 minutes or until the egg is set and the cheese melted.
