Lemon Mousse

 

4 egg yolks

1 cup sugar or substitute

½ cup lemon juice

pinch of salt

1-7-9 gr gelatin

1 tsp, vanilla

4 egg whites

¾ cups whipping cream

1 tsp lemon rind

 

Beat egg yolk add sugar and lemon juice

10 ml. rind + salt

Mix well sprinkle gelatin on top

Cook over medium heat until thickened and gelatin is dissolved (approx. 10 minutes)

 

Remove from heat beat egg white until stiff, fold in cream set 2-3 hours.
