Cajun Chips
This inexpensive snack is quick and easy.
Serves 4-6
Oil for frying
8 Corn tortillas Cajun spice blend
(blackened redfish seasoning works well)
Heat the oil to 350.
Cut each tortilla (like a pie) into 6 triangles.
Add to the oil and cook until crisp, turning
often.
Drain on paper towels.
Sprinkle lightly with the Cajun seasonings
while the chips are still hot.
Allow to cool.
Serve alone or with salsa. –
