Jerk Turkey Burgers

cup mayonnaise 2 teaspoons fresh thyme, chopped 1/ 4 teaspoon grated fresh orange peel 1 1/ 4 pounds ground turkey
or chicken 2 green onions, chopped 1 small jalapeņo chile with seeds, chopped Salt 4 teaspoons Jamaican jerk seasoning Nonstick
cooking spray Lettuce leaves
1. Prepare outdoor grill for direct grilling over medium heat. 2. In small bowl,
stir mayonnaise, thyme, and orange peel until well blended. Set sauce aside. Makes about 1/3 cup. 3. In medium bowl,
combine turkey, green onions, jalapeņo, and 3/4 teaspoon salt just until blended. Shape mixture into four 3/4-inch-thick
burgers. On a sheet of waxed paper, pat jerk seasoning onto both sides of burgers. Lightly spray both sides of
burgers with cooking spray. 4. Place burgers on hot grill rack; cook 12 to 14 minutes or just until meat loses its
pink color throughout, turning over once. Burgers should reach an internal temperature of 170°F. 5. Serve burgers
lettuce and sauce.
