Gingered Pork Burgers

1/4 cup mayonnaise 1 tablespoon soy sauce 11/4
pounds ground pork or chicken 1/2 cup loosely packed fresh cilantro leaves, coarsely chopped 3 green onions, chopped 1
tablespoon dry sherry 1 tablespoon finely chopped peeled fresh ginger 1 teaspoon Asian sesame oil 1/4 teaspoon crushed
red pepper Salt
1. Prepare outdoor grill for direct grilling over medium heat. 2. In cup, stir mayonnaise and
soy sauce until blended. Set soy mayonnaise aside. Makes about 1/4 cup. 3. In medium bowl, combine pork, cilantro,
green onions, sherry, ginger, sesame oil, crushed red pepper, and 3/4 teaspoon salt until blended, but do not
over mix. Shape pork mixture into four 3/4-inch-thick burgers, handling meat as little as possible. 4. Place burgers
on hot grill rack; cook 10 to 12 minutes for medium or until desired doneness, turning burgers over once. Burgers
should reach an internal temperature of 160°F. (If using chicken, spray burgers with nonstick cooking spray and
cook 12 to 14 minutes, to an internal temperature 170°F.) 5. Serve burgers soy mayonnaise.
