Egg Rolls with Bacon
8 eggs, beaten
1/4 tsp. salt
1/4 tsp. pepper
1 lb. ground beef
16 bacon strips,
diced
1 cup Cheddar cheese, grated
1/2 cup green pepper, chopped
Combine
the eggs, salt, and pepper; blend together. Set aside.
Sauté
the bacon until it is crisp. Drain, reserving 2 tablespoons of bacon fat. Sauté the ground beef in the bacon fat until it
begins to brown. Remove from heat and add the cheese and green pepper.
Mix well.
Add the bacon to the beef mixture. Mix well. Place the 1/12
of the egg mixture in a well oiled pan over a medium flame and cook for 1 minute. Turn over and place 2 tablespoons of beef
mixture onto the eggs and roll up.
