Cajun Sweet Potato Pone
Ingredients 4 large sweet potatoes, peeled and quartered 1/2 cup
butter 2 eggs, slightly beaten 1/2 pint whipping cream 1 tsp. vanilla 2 T. brown sugar 1/2 tsp. cinnamon
1/2 tsp. allspice 1/4 tsp. ground cloves Dash of freshly grated nutmeg 1/2 cup golden raisins 1/2 cup
flaked coconut 1 tsp. orange zest 1 tsp. lemon zest 1/2 cup flour 1 Tblsp. baking powder
Topping:
1 cup packed brown sugar 1/2 cup butter, room temperature 1/2 cup finely chopped pecans 1/2 cup Grape Nuts
cereal Method Boil sweet potatoes until tender, about 20 minutes. Drain and mash. Preheat oven
to 350º. Lightly butter a 13 x 9 baking dish. In a heavy saucepan, melt butter over medium heat; cook until light
brown in color, about 7 minutes. Stir browned butter and remaining ingredients except Topping, into mashed sweet
potatoes, blending well. Spread mixture into buttered baking dish; set aside. Prepare Topping by combining all ingredients.
Sprinkle Topping evenly over sweet potato mixture. Bake until golden brown and hot, about 30 minutes. Serve hot.
