Pineapple Upside Down Cake
3 tbsp. butter or margarine
1/2 cup brown sugar
6 - 9 slices pineapple (depending on size of pan)
6 - 9 cherries
1 egg
1/2 cup sugar
1/4 cup milk
1 cup flour
1 tsp. baking powder
1/8 tsp.
salt
1 tbsp. melted shortening
1 tsp. vanilla
Melt butter in large ovenproof
skillet. Add brown sugar. Stir until melted.
Cover with pineapple slices.
Place cherries in centres of pineapple slices.
Set aside. Beat egg lightly
and add sugar.
Beat well. Sift flour
together with baking powder and salt.
Add milk alternately with flour
mixture.
Beat well; add shortening and vanilla.
Pour over pineapple.
Cover and bake at 350º F. for 30
minutes.
Turn out upside down on plate and
serve with whipped cream.
Makes 6-8 servings.
