Pea Soup
4 ½ cups boiling water
2 cups pea
½ cup chopped celery
¼ cup diced onion
½ bay leaf
1 ½ tsp. salt
1/8 tsp. black pepper
Speck of crushed thyme and cayenne pepper
(optional)
Combine all ingredients except thyme and boil
moderately for 10 minute no longer
Reduce heat simmer for 45 minutes
Add thyme. Continue cooking for 20 minutes.
Add 1 to 1 ½ cups ham. I also add a dash of Worchester and simmer just till smooth.
