Oyster Loaf
This simple combination
of French bread, butter, and pan-fried oysters makes a hearty entree sandwich.
Serves 3-4
1 loaf French bread
3
Tablespoons Butter, melted
1 pound Oysters, shucked, fresh
2 cups Bread crumbs
2 eggs
3/4 cup Milk
3 tablespoons
Parsley, chopped
Oil for frying
Slice off the top third of the French loaf. Hollow out about half of the bread in
the bottom of the loaf. Pre-heat the oven to 350. Bake the bread for 10 minutes. While the bread toasts, heat 1/2 inch of
oil in a heavy pan. Whisk together the eggs and milk. Roll the oysters first in breadcrumbs, then the egg mixture, and finally
back into the breadcrumbs. Add to the oil and fry, turning once, until lightly browned. Drain on paper towels. Brush the butter
onto the inside of the bread. Add the oysters. Sprinkle on the parsley. Place the top of the bread over the bottom. Bake for
an additional 10 minutes. Slice into sandwiches.
