Holiday Ring Cake
                                     
                                    1 c. butter room temperature                   
                                    1 pkg. cream cheese (optional)
                                    1 ½ c. sugar                                                  
                                    1 tsp. vanilla
                                    2 tsp. grated lemon rind (optional)         
                                    4 eggs
                                    1 ¾ c. flour                                                   
                                    1 1/2 tsp. baking powder
                                    ½ c. raisons                                                  
                                    ½ c. golden raisons
                                    ½ c. candied fruit or peel                          
                                    1/3 c. nuts
                                    ½ c. chopped well drained Maraschino cherries          
                                    
                                    ¼ c. all purpose flour
                                     
                                    with electric mixer, cream butter, cheese; add sugar cream well; add vanilla and lemon rind; add eggs, one at a time,
                                    beat well after each; sift 1 ¾ c. flour with baking powder and blend in.
                                     
                                    combine fruit and nuts toss with ¼ c. flour.  stir into batter.  pour onto greased, floured 10 " bunt or tube pan. 
                                    bake in 300 degree oven till toothpick inserted in center comes out clean.  70
                                    -80 minutes.  cool for 10 minutes then turn out on wire rack to cool completely.  dust cake with icing sugar through small sieve. 
                                    or drizzle with glaze made with icing sugar and a little milk.
