Greek sandwich filling
                                     
                                    All amounts approximate
                                    .
                                    8 oz fresh (soft, unaged)
                                    goat's cheese, cubed
                                    1 tin black seedless olives
                                    1/2 teaspoon Olive oil
                                    Thyme 
                                    Small clove garlic/salt (options)
                                    Mash cheese and olives together
                                    with a fork as if creaming butter. Add olive oil, crushed garlic and thyme and mix well. If cheese is salted, DO NOT
                                    add salt. 
                                    Serve on toasted wholemeal
                                    buns (focaccia works well). 
                                    Keeps well covered in the
                                    fridge.
