Gingered Baby Carrots
Serve this side dish with chicken or beef
entrees.
Serves 2-3
2 Tablespoons Butter
1 1/2 teaspoon Fresh ginger, peeled and minced
1/2 pound Baby carrots
1 Tablespoon Sugar
Melt the butter in a small sauce pan.
Remove from the heat and add the ginger.
Allow to steep at least 10 minutes.
Add 4 cups of water to a medium sauce pan.
Add the sugar and carrots.
Bring to a boil.
Reduce the heat and simmer until the carrots
are soft
(about 15-20 minutes).
Drain.
Add the ginger butter and toss well.
