Bid Bay Cookie recipe
1 cup unsalted butter 1/2
cup sifted confectioners sugar 1 tsp. vanilla 2 cups all-purpose flour 1 (6-ounce) packaged milk chocolate chips 1/2
cup finely chopped pecans

Using an electric mixer, mix cream butter
and confectioners sugar until fluffy. Add Vanilla, Gradually add flour. Mix well. Shape dough into sticks about 2 - ½ inches
long, ½ inch wide and ½ inch deep (thick). Place on ungreased cookie sheet. Flatten three-fourth of each cookie length-wise
with fork to ¼ inch thickness, leaving the patter of the fork lines in the dough.
Bake in a preheated 350-degree oven 10 to
12 minutes, or until done. Remove to wire racks to cool.
Place chocolate chips in a microwave safe
bowl and microwave on high (100 percent) power 45 to 60 seconds, or until melted. You can also melt in top of double boiler
or in a heavy-bottomed pan. Put chopped pecans in a small cup or bowl.
Dip plain end of each cookie in chocolate
mixture; dip into chopped pecans. Place on waxed paper.
These cookies freeze well.
Yield: 3 to 4 dozen cookies
Note: Dough might appear slightly dry when
mixing; I use my hands to knead in the last ½ cup of flour.
Wonderfully tender, melt-in-you-mouth cookies.
