Sweet-and-Sour
Red Cabbage
Serves: 6 to 8
· 1 small head red cabbage, shredded
· 1 medium Red Delicious apple, peeled, cored, and chopped
· 1 medium onion, chopped
· 1 cup water
· 1/2 cup apple cider vinegar
· 1/2 cup sugar
· 2 tablespoons butter
· 1/4 teaspoon ground cloves
· 1/2 teaspoon salt
1. In a large saucepan, combine all the ingredients
and bring to a boil over medium-high heat.
2. Reduce the heat to low, cover, and simmer
for 40 to 45 minutes, or until the cabbage is tender.
Note: This will last in the fridge, covered,
for a week or two. I recommend storing it in a glass container because the red cabbage could stain plastic containers, and
vinegar could react with metal ones, giving the finished dish a metallic taste.
