Strawberry Mousse
Serves: 6
Total Time: 1 hour 30 minutes
· 1 pint strawberries, washed and hulled
· 1 tablespoon orange marmalade
· 1 tablespoon unflavored gelatin
· 1/4 cup orange juice
· 1 tablespoon cherry liqueur
· 3 egg whites
· 3 tablespoons sugar
Puree strawberries in a blender or food processor.
Add marmalade. In a small saucepan, combine gelatin and orange juice. Add strawberry puree and heat slowly, stirring constantly
until gelatin is dissolved. Stir in cherry liqueur. Chill in refrigerator or freezer until mixture thickens. Beat egg whites
until foamy. Add sugar and beat until egg whites are stiff but not dry. Fold egg whites into strawberry mixture. Gently pour
into a 4-cup soufflé mold. Chill until set.
