Roasting Garlic
Roasted garlic adds a rich full flavor to dressings,
sauces, and marinades.
It is wonderful simply spread on French-style bread.
And it's easy to make.
Pre-heat
the oven to 325.
Toss about ten cloves (skin on) with two
tablespoons of olive oil.
Place in a roasting pan, sprinkle on a little water and season
with salt and pepper.
Cover with foil and cook for about thirty minutes.
Allow
to cool slightly then squeeze the garlic from the skin into
a small bowl.
Refrigerate if not immediately used.
