NEW ORLEANS STYLE EGGPLANT DRESSING


 1 large eggplant
 1 large bell pepper
 3 slices of bread
 salt
 pepper
 bread crumbs
 2 large onions
 3 hot peppers
 oil

Boil the eggplant until it is tender.
 Cool.
 When it is cool enough, scoop out the inside.
 Chop onions and bell pepper.
 Heat oil in a skillet.
 Add finely chopped onion and partially cook.
 Then add the chopped bell pepper and hot peppers.
 Stir while cooking for about 5 minutes.
 Soak bread in water.
 Squeeze excess water out of bread and add the bread
 to the eggplant mixture.
 Cook and stir for ten more minutes.
 Season to taste with salt and pepper.
 Place casserole in a dish.
 Sprinkle the top heavily with bread crumbs.
 Bake at 350 degrees F for about 35 minutes
 or until bread crumbs are browned.

 Serves 4.
