Chocolate Cake with Frosting

Chocolate Cake with Frosting

 

2/3 C. soft shortening 1 tsp. vanilla

1 2/3 C. sugar 2 C. flour

3 eggs 1/3 tsp. baking powder

2/3 C. cold water 1 1/4 tsp. soda

1 tsp. salt

 

Chocolate Frosting

 

1/4 C. Crisco (melted) 1 1/2 tsp. vanilla

1 C. boiling water 1/3 C. milk

1/4 tsp. salt 3 1/2 C. powdered sugar

 

Grease and flour two 9-inch layer pans or a 9x15-inch pan. Combine shortening, sugar and eggs. Alternate the cocoa and water mixture with the flour, baking powder, soda and salt until smooth and well blended. Add vanilla. Pour into prepared pans. Bake at 350 for 30 to 35 minutes for layers and 35-40 minutes for a loaf. Frost when cool.

 

For chocolate frosting: In a saucepan, melt Crisco. Remove from heat after melting. Add cocoa and salt. Stir in milk and vanilla. Put all powdered sugar in a mixing bowl and add chocolate mixture. Mix at medium speed until smooth and creamy. Add a T. more milk if needed for a better spreading consistency. Will frost two 9-inch layers ora 9x13-inch sized cake.
