Chicken Nuggets 4 Diabetics


6 servings/Serving size: 3 oz

1 cup dry bread crumbs
1/4 cup Parmesan cheese
2 tsp dried oregano
2 tsp dried basil
1 tsp paprika
1/2 tsp dried thyme
1&1/2 lb boneless, skinless chicken breasts, cut into 2-inch cubes
1 Tbsp olive oil


1.      Preheat the oven to 350 degrees. Combine all ingredients except chicken and oil in a plastic bag. Place chicken cubes in the bag and shake well.

2.      Place the cubes on a nonstick cookie sheet. Drizzle olive oil over the cubes, or mist lightly with olive oil from a spray bottle. Bake the cubes for about 10 minutes until chicken is cooked through and tender. Serve cold.
